The preparation: pork from Darlage Meats, hand-tenderized, hand-breaded, fried golden, approximately a half inch thick all around with perfect seasoning, topped with two strips of bacon, roasted corn salsa, and cajun mayo with lettuce, tomato, and pickle on the side. The Snickers cheesecake is made in-house by the kitchen's own pastry chef.
Rails Craft Brew and Eatery is the other Jackson County tenderloin option in Seymour. Lola's runs Tuesday through Sunday, open from 10:30 AM with Sunday brunch until 3:00 PM.
For any tenderloin enthusiast routing through Jackson County on I-65 or willing to find the Freeman Field Industrial Park address, Lola's Modern Kitchen at 820 A Ave E in Seymour is the best-I-will-ever-eat stop. The slightly-out-of-the-way location is the only barrier. The roasted corn salsa and cajun mayo are the reasons to overcome it.
